Marmalade
As the hot syrup gently simmers, golden pieces of peel rise and swirl, only to sink again into the depths. Small islands of foam form on the surface, breaking and reforming as they're buffeted by the bubbles. Scented steam rises and condenses into clouds, filling the kitchen with the heady aroma of citrus fruit.
